Each perfectly ripe fruit must be bursting with sweetness and rich umami flavor, nurtured by the hot sun that marks most days in the southern region (Puglia gets, on average, 2,500 hours of sun every year!). They’re then carefully hand-peeled to protect the integrity of the fruit, quick-cooked and jarred in pure water—all within hours of harvest!
